Where He’s Been and What He’s Done

After graduating from the Culinary Program at NBCC in Moncton, Les moved on to pursue a career as an accomplished Chef. He started as an apprentice at the Fairmont Chateau Lake Louise, moving onto the Delta Beausejour, the Hilton in Montreal, Coast Hotels and Resorts in Kelowna and joined the Delta Team in Halifax in 2006.

Les has a serious, community-minded side. He strives to build strong contacts with Nova Scotian food producers. He appreciates the opportunity to contribute to Delta’s community relations efforts, such as its participation in the Savour Food & Wine Show and Chefs for UNICEF.

Philosophy

Les takes pleasure in experimenting with global cuisine—while using the freshest local ingredients. Above all, Les enjoys the hands-on processes behind cooking as well as the history of regional culinary traditions.

Personal Values

Les plans to settle down in the country and raise a family in a lifestyle similar to his own upbringing. His favorite place to eat is his own dining room table, surrounded by family and friends, with lots of food, cheers and laughs. He strives to achieve a balance with his personal and professional priorities, concluding: “After the day is done, it’s all about family.”

On the Personal Side

A member of the Canadian Culinary Federation of Chefs and Cooks and former member of the gold-winning Culinary Team Nova Scotia.

Raised in Riverview, New Brunswick, Les learned the importance of being self-sustaining at an early age, helping his father and grandfather in the garden and at harvest time.
Les resides in Dartmouth.
