Dear Colin, Chef Les and Adam,
I just want to express my deepest and sincerest thanks for the most amazing dining experience most of us have ever had. Chef Les’ 8 course wine-paired Chef’s Table / ERAPPA Victory Dinner was a most amazing success. Your attention to detail and to making an impression has gone beyond anything I have ever experienced in a hotel. It is truly easy to see why The Harbour City Grill has been declared Halifax’s best restaurant. I especially loved the sculptures made out of the left over conference logo’d hotel room card keys! Colin, you are a consummate professional and I wish every hotel that I work with had one of you. Chef Les, you are brilliant – never lose that creative personal touch (and thanks for the homemade ketchup!). Adam, from your presentation of the Dom Perignon to your perfect beverage choices for each course, you truly helped create an impactful evening (the bottle of Vero in my room was a lovely touch!).
Again, thanks for an evening I will not soon forget!
